Cactus Rose ready to bloom in Wilton
A mother-daughter team is bringing their version of Southwest cuisine to Wilton with Cactus Rose Cantina.
Located in a space once occupied by The Mediterranean Grill, the restaurant is set to open by the end of November after extensive renovations, according to Maria Pertesis , co-owner of the business with her mother, Katerina Pertesis .
"It's going to look like something out of New Mexico, with Navajo white adobe walls and a mosaic with the colors of a beautiful sunset. It will be a Southwest grill with a margarita bar," said Maria Pertesis, like her mother, an Easton resident.
The co-owners designed the motif in cooperation with cb5 Restaurant Group, a Greenwich-based restaurant consultant.
"They came to us with their passion and ideas," said Jody Pinette , chief executive officer of cb5. "A lot of people think we work only for big corporations, but the handcrafted restaurants have a special place in our hearts. For Wilton, we decided we needed to be a neighborhood restaurant. They have such exuberance. It was built around their personality."
